Green smoothies are my go-to breakfast, and this one is a real winner. When I want to add some spice to a smoothie, I usually reach for cinnamon. This time, I tried cardamom instead and was so pleased with the spicy punch. Like most of my smoothies, this one is full of veggies in the form of spinach and frozen cauliflower. I used strawberries as the fruit in this one. The cashew butter and cardamom really dominate flavor-wise, so the strawberry taste didn’t come through too much. I’d say you could use any fruit of your choice in this smoothie with good results. The cashew butter and chia seeds both ensure that this cardamom cashew smoothie keeps you full and satisfied for a long time.
- 1 c. unsweetened almond milk
- 1 c. frozen strawberries
- 1 c. frozen cauliflower florets
- 1 c. packed spinach
- 2 T. cashew butter
- 2 T. chia seeds (optional: soak in 2 T. water for 10 minutes)
- ½ tsp. ground cardamom
- Combine all ingredients in a blender until smooth.
