These three ingredient mango pops are the perfect quick, sweetener-free dessert! Just blend coconut milk, mango and vanilla then pour into molds and freeze. I thought these pops were the perfect balance of tart and sweet, but you could definitely add a little sweetener if they’re too tart for you. I made these with full-fat coconut milk, and highly recommend you do the same.
- 1 c. diced mango (frozen is fine)
- ½ c. coconut milk
- ½ tsp. vanilla extract
- Blend all ingredients until smooth. Pour into molds and freeze until solid.
