If you’re looking for a quick side that goes with just about anything, I’ve got you covered with these sweet potato fries. These fries are simply seasoned with ancho chile and garlic powder, then baked at high heat for just 30 minutes. I could imagine these fries pairing nicely with any sandwich, lettuce wrap, salad or taco.I would also bet that these would make a great taco or burrito filling. I served them on the side of a summer squash salad with cilantro pesto, and they were the perfect match.
- 2 lbs. sweet potatoes, scrubbed and cut into batons.
- 2 T. olive oil
- 2 tsp. ancho chile powder
- 1 tsp. garlic powder
- 1 tsp. sea salt
- Preheat oven to 450F.
- Toss the sweet potatoes with the oil, spices and salt. Spread out on 2 greased or lined baking sheets.
- Bake for 30 minutes, tossing halfway. Fries should be soft and crispy on the edges.
