For my gluten reintroduction post-Whole30, I thought long and hard about what I wanted to eat first! I debated long and hard between pasta and bread, and finally decided on bread. After that, I had to decide what to top it with. In the end, I decided I wanted to take advantage of the beautiful tomatoes that have been popping up at the farmers market.
I made simple heirloom tomato toast with just 5 ingredients. I bought a beautiful loaf of sourdough at the farmers market. After toasting it, I topped the bread with sliced heirloom tomatoes, also from the market. To finish, I sprinkled the tomatoes with flaky sea salt and black pepper and drizzled them with a high quality grassy olive oil.
Even though it was super simple, this toast was absolutely perfect. Because so few ingredients are involved, everything really needs to be top-notch. Get bread from your favorite bakery, and only make this when tomatoes are in season. I also highly recommend using a flaky sea salt or another specialty salt, and use a high quality oil that has a rich taste. Enjoy!
- 4 large slices bread, toasted (I recommend sourdough)
- 3 heirloom tomatoes, sliced
- Maldon sea salt (or other salt)
- black pepper
- best quality olive oil
- Top the toast with the tomatoes. Sprinkle with salt and pepper, and drizzle with a good olive oil.
