I left sugar as the last thing to reintroduce post-Whole30. I didn’t miss sugar that terribly much, and I was way more excited about legumes and whole grains 🙂 Since ice cream has always been my favorite dessert, I made a sundae for reintroduction. I topped store-bought vanilla coconut milk ice cream with fresh berries and a quick cinnamon nut date crumble.
After not eating sugar for several weeks, this ice cream tasted soooooo sweet. It was delicious but almost overwhelming. Going forward, desserts like ice cream are probably going to be a rare treat. I’m really feeling the nice cream sundaes right now, so that’s probably what I will go with when I want a sweet treat. The cinnamon nut date crumble will definitely keep making regular appearances. It takes just a few seconds to pull together, and it makes a great topping for nice cream and smoothies. I use walnuts and Brazil nuts, but any nuts and seeds would work well in their place. I’ll also be experimenting with other combinations for my sundaes.
- ¼ c. walnuts
- ¼ c. Brazil nuts
- ¼ c. dates
- ½ tsp. cinnamon
- pinch salt
- Combine all ingredients in food processor until crumbly.
