I typically try to keep my smoothies lower in fruit to avoid the all-too-common sugar crash after drinking a big smoothie. To balance out the sugar from fruit, I also like to add vegetables and healthy sources of protein and fat.
I took my smoothie guidelines to the extreme with this smoothie, and completely eliminated the fruit! This fruit free chocolate zucchini smoothie is thick, rich and just slightly sweet. It’s thickened with lots of frozen zucchini, and gets plenty of flavor from cacao powder and nut butter. To further enhance the flavors, I added some maca, cinnamon and vanilla.
This smoothie definitely won’t trick someone into thinking they’re drinking a chocolate milkshake, but it’s still delicious in it’s own right. I made it after an intense evening of back-to-back barre and HIIT classes, and it was the perfect dinner when I was tired, sweaty, and wanted something refreshing and nourishing for dinner.
- 1 c. unsweetened almond milk
- 2 c. frozen chopped zucchini
- 3 T. cocoa or cacao powder
- 2 T. unsweetened nut butter
- 2 T. chia seeds (optional: soak in 2 T. water for 10 minutes)
- 1 T. maca powder
- 1 tsp. vanilla extract
- ½ tsp. cinnamon
- Combine all ingredients in a blender until smooth.
