Here’s a quick recipe for my favorite matcha latte. This latte is not only vegan, but also paleo and Whole30! To contribute sweetness without adding any sweetener, I used lucuma powder. Lucuma is a Peruvian fruit that is very low in sugar, but has a sweet maple taste. I’ve yet to see the powder in a store, but it can be found on Amazon and other online retailers.
To make the matcha latte, just heat unsweetened milk (confession: I often just use the microwave) then use a small whisk to incorporate both the matcha and lucuma powders. I finish with a little bit of vanilla extract. If you’re doing a Whole30, either find an alcohol-free extract or sub vanilla powder. Then enjoy your delicious, low-sugar, sweetener free drink 🙂
- 1 c. unsweetened almond milk
- 1 tsp. matcha
- 2 tsp. lucuma powder
- ½ tsp. vanilla extract
- Heat almond milk to your desired temperature. Whisk in the remaining ingredients until fully incorporated.
